Recipe: Quinoa Cakes

I was out with some my friends last week at a delicious french bakery and communal table in Philadelphia.  My friend ordered quinoa cakes!  I immediately regretted my purchase and wished that I had ordered what she had.  So after coming home, I quickly googled recipes and decided to try my hand at it.  Here is what I came up with for my recipe

1 zucchini shredded (mine was small)
2 carrots shredded
2 cups cooked quinoa
1 onion finely chopped
1 garlic clove minced
A teaspoon of lemon  juice
1/4 cup italian seasoned bread crumbs
1 egg

Combine all ingredients and form into patties.  Pan fry on medium heat for about 4 minutes per side.


These were absolutely delicious!  I served them with broccoli salad.  These are great as a main course, but could also make a delicious side as well.  My husband suggested making them smaller and serving them as an appetizer at a party.  Hope you enjoy!
